Recipe: leprechaun smoothie

If you are trying to embrace the St. Patrick’s Day spirit, then you may want to try making this smoothie. It’s loaded with lots of healthy nutrients and is a delicious way to sneak in some greens at breakfast. Using light-colored fruits in this smoothie will ensure that you protect the green color of the spinach. However, you are welcome to use whatever frozen fruit you have on hand.

 

Ingredients

  • 1 ½ cups frozen mixed fruit

I used 1 cup of a mixture of mangoes, pineapple and peaches, and ½ cup frozen bananas

  • 1 cup plant-based milk

  • 1 large handful of fresh spinach

  • ⅓ cup plain yogurt

 

Directions

  1. Place all ingredients in a blender.

  2. Blend until smooth.

  3. Sit back and enjoy!

 

Note: You can adjust the milk measurement depending on how thick you want the smoothie to be.
