Recipe: Panera green goddess copycat salad
Panera is known for their delicious salads and sandwiches, and this is no exception! This salad is refreshing and great for meal prep because the pickled red onions and salad dressing both make more than you need for one salad.
Ingredients
Mixed greens
Grilled chicken
Tomatoes
Feta cheese
Chopped avocado
Tip: Use precooked frozen grilled chicken to make this an easy meal.
Pickled red onions
1 red onion
3/4 cup white or apple cider vinegar
1/4 cup water
Heaping tablespoon sugar
1 teaspoon salt
Slice red onion into thin slivers and place in a jar. Add in the rest of the ingredients and put the top on the jar. Shake to combine. Leave overnight to let the pickling process happen.
Green goddess salad dressing (makes 2 cups)
1/2 mayonnaise
1 cup Greek yogurt
1oz fresh chopped basil
2 tablespoons chopped shallot
2 tablespoons pesto
1/4 cup white wine vinegar
Heaping tablespoon honey
1 teaspoon Dijon mustard
Pinch of salt and pepper
Place all ingredients into a blender and blend until you reach a smooth consistency.
Directions
To assemble the salad, put a base of greens on first and then add on all of the toppings. Finish it off with a generous drizzle of the dressing and enjoy.
